SOUTHERN STYLE MAC N CHEESE
1 pd elbow macaroni or shells
4 cups of cheese – mixed types – sharp cheddar, mozzarella & colby jack work well together
1 cup of milk
1/2 stick of butter – softened
2 eggs – beaten
salt & pepper
garlic powder – optional
Preheat oven at 325 degrees
Boil pasta until they are almost done, they will cook more in the oven. Once the pasta is done drain most of the water from the pot. Transfer the noodles into the dish you are baking in, this recipe fits perfectly in a 9×5 loaf pan.
Then in the pot you cooked the noodles in mix cheese, milk and butter. Melt to make a smooth cheese sauce. Add the cheese sauce to the noodles and mix. Add seasonings – salt, pepper and a dash of garlic powder, to taste. Once you have the seasonings to your liking mix in beaten eggs. You want to add your eggs last so you are not consuming raw eggs when tasting.
Level noodles and sauce in pan. Bake at 325-350 degrees for about 45 minutes or until the top layer of the pasta is a golden brown. Remove from oven and let stand ten minutes. Serve and enjoy.
This is a VERY rich dish to be enjoyed in moderation. I personally only make it for holidays and special occasions. Remember, regularly keep fresh fruits and veggies in your diet – veggies build you up, fruit moves the food along. Drink water, too.
