1 red pepper, diced
1 small onion, diced
2 cloves of garlic, diced
1 tablespoon olive oil
1-1/2 cups of jasmine rice
3 cups of water
1 small can of black beans, drained
Saute diced onion, red pepper and garlic in olive oil in a frying pan.
Add rice and water, bring to boil.
Add drained beans to pan.
Season to taste: chili powder, red pepper flakes, cayenne pepper…
Turn the heat down. Stir gently.
When the rice and bean mixture has absorbed the broth enough to meet the water line turn the heat off completely. Cover. Let stand at least 10 minutes. Fluff. Enjoy perfectly cooked rice every time. #thewellnessway
