Roasted Snapper

Preheat oven to 350 degrees.

Rinse 2 fresh whole fish, about a pound each, with head and tail removed.

In a baking pan with a rack.  

Cover with the juice of one lime or lemon.  

Stuff the squeezed citrus inside the fish.

Season to taste: salt, pepper, cayenne, smoked paprika

Cook for an hour.  

Broil for a few minutes on each side for a crispy skin.
